The Cardamom Trail

I thought I’d take a detour today to offer a yummy teatime treat from one of my favourite bakers and imaginary best friend, Chetna Makan (you know her from The Great British Baking Show).

I’ve been working through her cookbooks for the last two+ years or so (reviews forthcoming), and tonight’s gem comes from The Cardamom Trail: a Date, Walnut, and Nutmeg Cake inspired by her mother.

This simple yet pleasing cake is the perfect not-too-sweet companion to tea both in the morning or before bed, and you can find the recipe in Makan’s beautiful cookbook. I followed her instructions completely, but then deviated just a little by sprinkling a bit of pink Himalayan sea salt on top for that salted caramel flavour Kent loves.
