Who wants to throw down in the kitchen on Christmas morning (or even Boxing Day, if you’re off)? Prepping this brunch is quick, easy, and tasty. Pictured is the Eggtastic Casserole and Pom Salad we enjoyed Christmas morning. We had it with eggnog and Lady Grey tea.
Ingredients for Eggtastic Casserole:
5-7 eggs
¼ c. heavy cream
2 tbs. mustard
½ onion, chopped
4 cloves garlic, chopped
5 russet potatoes
1 c. fresh spinach (you can sub kale, chard, or broccoli if you’d like)
½ c. milk
3-4 slices (or 1/3 c.) of Muenster cheese (cheddar or gouda work well, too)
1 tbs. butter, for sautéing the veggies
salt, pepper to taste
Directions:
Set oven to 350 F.
Peel potatoes and cut into cubes. Set aside.
Chop onion and garlic. Melt butter in a pan and saute onion and garlic for 4-5 minutes. Add spinach, and cook until wilted.
In a large mixing bowl, beat the eggs, cream, mustard, and milk. Add salt and pepper.
Mix in potatoes, cheese, and sauteed veggies.
Pour into greased 8 x 8 square baking dish, and place on center rack. Bake for 40 minutes at 350 F.
Lower heat to 275 F and cook until the center of the casserole is firm to the touch.
Serves 8.
Pom Salad
1 head butter leaf lettuce (or your favorite lettuce variety)
1/3 onion, sliced
goat cheese, crumbled
1/2 c. pomegranate seeds
balsamic vinegar
Directions:
Pile it all together, and enjoy!
