Definitely needed some tasty food to get my mind off of those vice-pres debates last night. Luckily, it was National Taco Day!
These babies are full of garlic, onion, potatoes, tomatoes, chilies, cauliflower, and cilantro. I just cut everything up in small pieces, sauteed the onion and garlic, added the other ingredients, and poured in 1/2 cup of water. I didn’t have a lid big enough for the pan, so I covered in aluminum foil and let it simmer for about 15-20 minutes. The tortillas are corn, because I think flour tortillas are some foolery. I topped my tacos with full-fat Greek yogurt.
